The knives were the standard 'Institutional' all steel issue (for the most part*) although in the rush to equip the Army, a number of civilian items were pressed into service. The forks tended to be of the standard turn-of-the-century plain 'tongue-depressor' style** and fairly large. The Spoon, in a similar pattern, was very similar to a table-spoon of the period (and about the same size). In the 'earlies' the Fork and Spoon were heavily stamped with the man's regiment on the upper surface (large stamps) and his 4 figure regimental number on the underside of the 'tongue'.
For a possible source of supply, try 'junk shops', places dealing with house clearances etc. these are the kind of items which don't make the "quality" collectors' markets as a rule, they were just TOO common and usually in base metal (or at best EPNS).

I have some utensils that i have used for civil war. They are stainless steel i believe with a wooden handle. Would these be okay? They are really nice, so when im reenacting i have to say i took them off a dead officer.
