Assuming your allies have been wiped out around you and the enemy is advancing across no-man's land, would it be acceptable for a member of the unit to commandeer the nearest machine gun for a last-ditch effort, or is such activity discouraged and restricted to the gun's crew only?
I ask this purely for safety reasons, as the situation may arise for any of us at any time during an event.

I personally would never touch another person firearms be it pistol, rifle, mg, mortar, etc. without his expressed approval of doing so. Many of the people who own the MG would want you to be trained on that weapon in order to use it, so unless you have been trained and have the approval of the owner of that MG, do not touch it what so ever.

One of the things we do in the ww2 unit I'm apart of, is everyone gets drilled on how to use the Bren gun. So that at an event the Bren gunner can change at a moments notice. We are allowed to have that grand oppertuinity because the owner allows us to. Though it might be something other units look into copying.
