What is the difference (other than the obvious) between the khaki & pea green field gear that Schipper sells? Why would anyone want the pea green stuff?

The pea green color was used on a lot of the earlier web gear, most notably that produced from 1912-16. For those of us who do earlier impressions like myself (Punitive Expedition, 1916), the pea green web gear is more appropriate.
Eagle snap web gear in pea green is also fine for WWI and much of the gear issued to the first citizen soldiers (as opposed to Regulars) was a mishmash of old and new patterns.

Adam is right - for those of us doing the 1916 Border impression Schipper's repros are the ticket. And he correctly points out that many Doughboys at home and heading overseas in 1917 were wearing pea-green gear. There's a photo I recall of an infantryman from the 4th Division stepping off the ship in Europe - he's wearing an eagle-snap cartridge belt.
